Preheat your oven to 400°F (200°C). Place the chicken bones on a baking sheet and roast them for about 20-30 minutes until they turn golden brown. Roasting the bones can add depth of flavor to your broth.

1. Roast the Chicken Bones (Optional)

In a large stockpot or slow cooker, combine the roasted (or unroasted) chicken bones, chopped vegetables, bay leaves, and smashed garlic.

3. Start the Broth

Fill the pot with enough water to cover the bones and vegetables. Add the apple cider vinegar. The vinegar helps to draw out the nutrients from the bones.

4. Add Water

Bring the mixture to a boil over high heat. Once it's boiling, reduce the heat to low and let it simmer. Cover the pot with a lid, leaving a small gap for steam to escape. Let it simmer for at least 6-12 hours. The longer you simmer, the more flavorful and nutritious your broth will be.

5. Simmer

As the broth simmers, you may notice some foam or impurities rising to the surface. Skim these off with a ladle or a spoon.

6. Skim the Foam

After simmering for your desired time, remove the pot from the heat. Carefully strain the broth through a fine-mesh strainer or cheesecloth into a clean container, discarding the solids. You should be left with a clear and flavorful broth.

7. Strain the Broth

Season the broth with salt and pepper to taste. Allow it to cool before refrigerating or freezing it in airtight containers. The broth will become gelatinous when cooled, which is a sign of a well-made bone broth.

8. Season and Store
